Bacon & Corn Chowder

I was inspired watching Pioneer Woman on the Food Network this morning.  She was making a yummy looking corn chowder and, I decided to use what I had on hand and create my own version.  My hubby and I both ate two bowls each for supper, so, check to make sure your printer is working and, copy the recipe.   You will love this!  Very rich in flavor and perfect for a cold day, like we are having in Memphis today.  This would also be great served  for an elegant dinner party.

Easy ingredients  Sautee’ the bacon in butter for 5-7 minutes

Bacon & Corn Chowder

Ingredients
  • 7 slices thick sliced bacon
  • 1 stick butter, unsalted
  • 1 t. salt
  • 1 t. pepper
  • 1 t. fresh minced garlic (refrigerator section of grocery store)
  • ¼ cup flour
  • 1 can evaporated milk
  • ¾ cup half-n-half
  • 1 can chicken broth
  • 2 cans cream style corn
  • 2 cups cheddar cheese
  • Real Bacon Bits- for garnish

Instructions
  1. Cut up the bacon slices and, place in a Dutch oven. Add the butter, salt, pepper and garlic. Sautee’ the bacon with the butter and seasonings for 5-7 minutes (on high heat), until the mixture is light brown. Turn heat to medium. Stir in the flour. Stir in the evaporated milk, half-n-half, chicken broth and creamed corn. Turn down the heat to low and cover the pot. Allow the soup to simmer for one hour. Add the cheddar cheese and stir until melted. Garnish with real bacon bits. *You might add more salt to your taste.

Notes
Be careful to not scrape the bottom of the pan when you serve up the soup. *There may be a layer of dark browned soup in the bottom (from cooking time) and, you can easily clean the pan after you use the pan.
