OH! How I LOVE to cook a yummy Saturday morning breakfast! We are expecting snow in Memphis tonight and….if your weather is cold too….this hot breakfast dish, Bananas Foster French Toast, is the perfect solution. We ate this last Saturday morning and, we all loved it! I served it with bacon— “fried up” in the oven….my favorite way to cook bacon these days….no mess and, crisped to perfection.
Perfect Bacon: Simply lay out the bacon (I use thick sliced) on a jelly roll pan, side by side. Place the bacon in a preheated 400 degree oven. Cook for 15-20 minutes, depending on how your oven cooks. Remove from oven and place each piece on a a stack of 4-5 paper towels, this will absorb the grease. Serve right away. So good!
- 8 slices wheat bread (white bread is fine too)
- 4 eggs, beaten
- 1 cup whole milk
- 1 t. cinnamon
- 1 t. vanilla
- 4 bananas, sliced
- 1 cup brown sugar
- ½ stick butter, melted
- whipped cream, garnish
- caramel sauce (ice cream topping)
- Spray a glass baking dish with baking spray. In a medium sized mixing bowl, beat the eggs, milk, cinnamon and vanilla together. Place the bread slices in the baking dish. Pour the egg mixture over the bread slices, making sure each piece is covered. Place the sliced bananas over the top of the bread evenly. Sprinkle the brown sugar over the bananas and bread. Melt the butter and pour it evenly over the top of the sugar. Bake at 350 degrees for 35-40 minutes, until the edges are bubbling. Remove from oven and, serve with a dollop of whipped cream and caramel sauce drizzled over the top.
I HAVE to have my hot coffee before I start to cook! Here is the French Toast, right out of the oven……delish! Serving it up….SO good with the bacon! Boss is loving this breakfast!
