Oh! I just LOVE it when my children and my sweet hubby enjoy a meal that I prepare. This recipe was something that each of them enjoyed. I made it this past Sunday night. You all know how I love a quick fix recipe and, I had a good time whipping this up! I’m from Texas (transplanted to Memphis, TN!)- so, any time I can cook good “Tex-Mex”, well…..I can’t get enough!
- 1½ pounds ground beef, browned (drain off grease)
- 1 package taco seasoning
- 1 t. salt
- 1 t. pepper
- 1 t. garlic powder
- 1 can cream of mushroom soup
- ½ can evaporated milk
- 1 can black beans
- 1 can chopped RO-TEL tomatoes (plain or, spicy, per your taste)
- 1½ cups grated Cheddar Cheese
- 1 bag tortilla chips (I used the “Scoops” kind)
- Use a large skillet and brown the meat with the taco seasoning and, drain off grease. Add the mushroom soup, evaporated milk and salt/pepper/garlic powder, stir well. Add the black beans (drained) and Ro-tel tomatoes. Stir together with meat/cream mixture, over low heat until blended and warm.
- Layer the meat/cream mixture with the tortilla chips in a bowl. Garnish with grated cheese. *Can also garnish with sour cream, per your taste.
- Serve hot. SO SO good! ENJOY!
- Easily doubled for a larger group.
