Fresh Bow Tie Pasta Salad w/ Artichokes and Lime Vinaigrette

The blogging world is such fun!  About one year ago, I “met” my friend Amanda Brown of the blog My Heart’s Desire.  We met through a friend, but, almost  two weeks ago, she was passing through Memphis and, came over for lunch…our first time to ever meet in person.  We had the best chat and, I made this salad for the occasion.   What a great time we had, chatting about everything from church to children to our love of blogging!   Don’t you just love it when you make a sweet new friend?  Thanks for coming to see me Amanda!

Fresh Bow Tie Pasta Salad w/ Artichokes and Lime Vinaigrette

Serves: 6-8
 

Ingredients
  • 1 package bow tie pasta (Farfalle), boiled w/ ¼ cup olive oil
  • 1 small can sliced black olives, drained (optional)
  • 1 jar sliced pimientos, drained (can substitute one chopped red pepper)
  • 1 can small artichoke hearts, chopped and drained
  • 4 T. pesto
  • 1 cup freshly grated Parmesan cheese
  • 1 t. ground sea salt
  • ½ t. course ground black pepper (or more, to taste)
  • Lime Vinaigrette:
  • Mix all in a salad dressing shaker:
  • ¾ cup olive oil, extra virgin
  • ¼ cup white wine vinegar
  • 1 t. ground sea salt
  • ½ t. course black pepper
  • 2 T. pesto
  • Juice of 2 limes
  • Shake well until blended. *Refrigerate any leftovers.
  • Add more salt and pepper, according to taste

Instructions
  1. Boil the pasta until soft, on high heat and drain. Let cool to room temperature
  2. Place pasta in a large salad bowl.
  3. Add the olives, pimientos, artichoke hearts, pesto, cheese, and salt & pepper
  4. Toss all together and cover.
  5. Chill 1-2 hours before serving or, overnight.
  6. Serve with rolls or muffins. So good!

Setting the table…spring table setting I love a table set for two…two friends, how fun! Making the salad…super easy and, so fresh tasting! My special dressing…you have to try this!  =) Love me some Pesto!!!Lots of flavor and, pretty to look at! Make this salad for a luncheon soon.  Perfect for a baby or wedding shower….or, a “Girl’s Night Out”…One more picture….just to get you inspired.
