Hello Everyone! I truly hope this message finds each of you enjoying a wonderful Christmas season. Since we have a sweet newborn son, we decided to stay in Memphis for Thanksgiving this year. Our families live near Houston (where I grew up) and in eastern Kentucky (where my husband grew up)….so, almost every holiday, we are burning up the roads to visit them. Well….this year, we were “home sweet home” and, I found myself SO excited to whip up our very own Thanksgiving meal. For many years, I have been spoiled because either my Mom or Mom-in-love are cooking up the feast.
I have been making hot pineapple salad for as long as I can remember. I’ve made it so many times, that the recipe is memorized. This recipe is sweet and served warm. YUM! Try it out for a Christmas party this year or, serve it up on Christmas day. Your family and friends will love every bite!
- 3 cans pineapple chunks, reserve 5 T. juice
- 2 T. flour
- 1 cup sugar
- 1½ cup cheddar cheese, grated
- 1 sleeve Ritz brand crackers, crushed
- 1 stick butter, melted
- Prepare a glass 9 x 13 baking dish with cooking spray. Combine the pineapple chunks and sugar in a medium size bowl. In a smaller bowl, wisk the reserved pineapple juice and flour until blended. Pour this mixture in with the pineapple and sugar. Add the cheese and stir. Pour pineapple and cheese mixture in to the baking dish. Spread the crushed crackers over the top. Melt the butter and evenly pour the butter over the crackers. Bake for 30-35 minutes until hot and bubbling around edges. Serve right away.
