Serves: 6

  • 1 medium chuck roast, with a good amount of fat on it
  • ½ cup olive oil
  • 1 small package baby carrots
  • 8 small white potatoes, cut in to quarters
  • 2 stalks celery, rough chopped
  • 1 cup chopped onion, add more, (if you like onion)
  • 2 t. ground sea salt
  • 1½ t. ground pepper
  • 1½ t. garlic powder
  • 1 cup red wine
  • ½ bottle beer (any brand)
  • 3 T. flour + ½ cup boiling water

  1. Rinse the roast and, pat dry with paper towels. Add ½ cup olive oil to a medium skillet. Turn heat on high temp. and brown the roast for 1-2 minutes per side, until nice and browned. Place roast in a large Crock Pot. Sprinkle sea salt, ground pepper and garlic powder on the top. Add the red wine, cut up potatoes, celery and onion. Turn Crock Pot on to high and cook for 1 hour. After 1 hour, add the carrots and, the beer. Stir well. Mix the flour and boiling hot water in a glass, making a paste. Slowly pour paste into the Crock Pot. Add more water to the paste if you need to make it more liquid. *This mixture will thicken the brown beer gravy.
  2. Continue to cook on high for 3 hours. Switch temperature to low heat for 1-2 hours and then, serve.
  3. This is SO delicious!
  4. Serve with hot rolls and a green vegetable. NO leftovers! Easy and good!!!!
