Seared Tuna Salad

This salad is DELICIOUS!   As always,  these days, I prepare quick meals for my family.  This salad can be prepared in 15 minutes.   Super healthy and, very good!   ENJOY!

Ingredients:

2 filets raw tuna

2 T. extra virgin olive oil

2 T. lemon pepper seasoning

4 cups mixed fresh greens

2 ripe avocados, sliced

3 hard cooked eggs, chopped

4 slices crisp thick sliced bacon ( I used Wright’s bacon),  cooked crisp and excess fat drained

Creamy balsamic vinaigrette

To Prepare:

Chop tuna filets in to 1-inch cubes.   Place in hot skillet w/ 2 tablespoons extra virgin olive oil and lemon pepper seasoning.   Toss tuna cubes until each side is lightly brown/seared.  * This is a quick process, 2-3 minutes.   Leave inside of tuna pink, rare.  Remove from pan and blot excess olive oil.  Set aside.

Place mixed greens in a large salad bowl.  Add seared tuna, sliced avocado, sliced eggs and crumbled bacon.  Serve with balsamic dressing.   Eat and ENJOY!
