Summer Vacation, Rest and A Quick Breakfast Recipe

OH!  How I adore summer time with my family and going to the beach.  For the past 3 years, we have enjoyed Perdido Key, Florida very much.  The beach is not very crowded and, the prettiest sea shells always wash up.  My children love to play in the sugar like white sand and, we literally spend all day every day and most evenings, on the beach.  My husband loves to fish in the evenings with our boys.  This year, they caught several nice white fish.  While at the beach, I have to get creative with cooking because we try to buy the bare basics for groceries, we do not want to have to throw out good food at the end of our stay, caused from over buying.  These Peanut Butter and Jelly ( PB & J ) biscuits went over ‘big’ with my kids for breakfast last week.  Super quick and, even good for the adult peanut butter lover.


1 can country style biscuits

Creamy Peanut butter

Grape jelly (or flavor of your choice)

Powdered sugar


Spray a muffin pan with baking spray.   Form each biscuit into a cup shape and press one in each muffin pan hole.   Add 1/2 t. each of peanut butter and jelly to each biscuit.  Pinch biscuit dough together, covering the pb & j mixture.   * Do not worry if some of the jelly comes out of the dough, it will bake just fine.   Bake at 375 degrees 10-12 minutes until nice and browned.  Sprinkle with sifted powdered sugar and serve warm.   SO DELICIOUS with chilled whole milk or, for adults, with a hot cup of coffee.   ENJOY!

Bo is loving the water! Sweet Blair.  She loves the beach!Brooke is relaxing!Boss loves the feel of the sand.I hope you have been able to take some rest and relaxation time this summer.  Time to reflect and rest your mind.  This month, I have been specifically praying for each of my children and, really thinking a lot about the upcoming school year and how I want to best use my time.   My big prayer going into this summer was to have quality time with my kids and to really focus on the word “NURTURE”.   Nurturing my children.  Lots of hugging, lots of positive ‘deposits’ into their lives.  During the rush of the school year, I can be such a “task master”— each day, going through the day, “checking off the boxes” on my TO DO LIST.   The summer provides time to really slow the pace down, rest and bask in the beauty of each sunny or rainy day.   Thankful for the beach, time away and time at home.  Thankful for the season of summer.   I would love to hear from ya’ll and know what you are up to this summer.  Don’t forget, if you have not had a moment to simply STOP and rest and relax, it isn’t too late.  Make a point to get away from your day-to-day “grind”.   Even if you pack up and drive one hour from home.  I promise you, a little time away is SO GOOD for the soul and mind.
