THREE GREAT RECIPES FROM THE WEEKEND: FRESH FISH TACOS, HAMBURGER CASSEROLE and QUICK PEACH COBBLER

What a fun weekend of being at home with my husband and children and, a good time inventing two new recipes.  I also want to share a FANTASTIC and SUPER EASY cobbler recipe with you all, I haven’t made it in many years and,  remembered what a great recipe it is! 

FRESH MAHI MAHI TACOS 
1 large mahimahi filet  (Or Tilapia) 
1 cup Cheddar Jack cheese- grated
sea salt and fresh ground pepper to taste 
1 cup fresh salsa
1/2 cup Ranch dressing
Corn tortillas 
Garnish:  Fresh cilantro

Rinse the fish and season with salt and pepper.  Broil for 20-25 minutes, check and make sure you do not over cook.  Chop the fish into 1-inch cubes.  Place the fish on warmed corn tortillas and, top with cheese, salsa, Ranch dressing and, chopped cilantro.  

THESE TACOS MAKE A FAST and FRESH MEAL!  

PEACH COBBLER

1 cup sugar
1 cup flour
2 teaspoons baking powder
dash of salt
1/2 cup milk
1/2 stick butter, melted
1 can of chopped peaches (not pie filling)

Spray an 8 X 8 baking dish or disposable pan with baking spray.  Place melted butter in the dish.  Mix together sugar, flour, baking powder, salt and milk.  Press dough in bottom of pan.   Place the can of peaches on top of the dough, no need to drain the peaches.  Bake the cobbler at 350 degrees for 45 minutes or, until the cobbler is lightly browned.

*This recipe can easily be doubled and, use a glass 9 X 13 pan for this.  Serve warm with vanilla ice cream.  *The dough will rise up and cover the peaches during baking. * You can also use a can of pie cherries in place of the peaches. 
QUICK AND GOOD: HAMBURGER CASSEROLE

1 pound ground beef
1 package taco seasoning
1 can pinto beans, drained
1 can diced tomatoes, drained 
1 t. salt
1 t. pepper
1/2 t. garlic powder, or more, to taste 
1 can cream of mushroom and chicken soup
2 cups Cheddar Jack cheese
15 corn tortillas 

Brown hamburger meat with taco seasoning and drain.  Add beans, tomatoes, soup and spices to the meat. Stir up.  Spray a 9 X 13 glass dish with cooking spray.  Tear up 12-15 corn tortillas into one-inch pieces.  Starting with the tortillas, layer with sauce and tortillas, ending with sauce.  Top with cheese.  Bake at 350 degrees for 30 minutes.  Garnish with sour cream and salsa. 

FLAIR TIP:  I made this casserole for some family friends Sunday evening.  Always take a disposable pan when you are making a meal to take to someone.  *I stock up on these pans at COSTCO and, always have them ready in the event I need to deliver a meal.  *Very convenient for the receiver to not have to return your dish.  FLAIR TIP:  Keep cute STICKER LABELS on hand at all times.  You can easily label each dish that you are delivering to your friend (or person in need) with the recipe name and, cooking directions.  Use colorful labels on the tin foil. The label will add a nice detail and a pop of color.
