Oh my! Don’t you just love a fresh batch of cookies? I sure do! My children do as well! Cookies are truly a comfort food. Make a batch of these or, you can easily double this recipe and, give some away to neighbors or, leave them as a “happy” on a friend’s porch. You can also freeze these goodies and, use them in your children’s lunches. What a fun surprise for your child….a homemade cookie in his/her lunch box…this spells L-O-V-E!
- 1 box chocolate cake mix
- ½ cup water
- ¼ cup cooking oil
- 1 egg, lightly beaten
- ½ cup fudge sauce (I used ice cream topping, *microwave for 10 seconds to make it pourable)
- ¾ bag chocolate chips
- Preheat oven to 350 degrees. Mix cake mix, water, oil and the egg. *May add 2 T. water, as needed, to make the dough easier to stir. Add the fudge sauce and stir. Fold in the chocolate chips. Stir. Drop by 1-inch spoonfuls on to a cookie sheet. Bake for 8-10 minutes and remove from oven. Allow to cool and then remove.
- *Alternative: Make bars out of this dough vs. cookies. Spray a 9 x 13 glass baking dish with cooking spray. Press the dough into the pan. Bake at 350 degrees for 15-20 mins. Allow to cool in the pan and cut into squares. Dust with powdered sugar and serve.
